- 1 medium to large Jicima
- 1 large Watermelon Radish – I use Watermelon Rashes because I like the look, but you can use 4-5 regular radishes
- Fresh Cilantro chopped
- Juice of 4-5 Limes – It is best if you actually juice the limes
- 1 or 2 Mangos
- Salt to taste
Chop the Jicama, Radish, Mangoes, and Cilantro into small pieces. This is very helpful if you are angry and need to work out some aggression. If you are not angry or in a hurry, you can pulse them in a food processor.
Mix in a large bowl. Add the juice of the limes and salt. Let it marry in the fridge for at least an hour or overnight. If you use Watermelon Radishes, the Jicima will turn pink while it sets.
Serve with chips, or on tacos, or whatever.
