Mom’s Famous Tomato Soup

It’s not famous other than among my kids. But that’s what they called it. Or is that what I called it in my head?

This can be made quick but it really is best if you let it simmer for a good chunk of time before eating. I have found that a large crockpot works best. You will also need a blender for the prep. Exact quantities are not adhered to, I throw in what I have

  • Canned Tomatoes 2 or 3, depending on how many you are serving
  • Cucumbers – I use one cucumber for every 16 oz can of tomatoes
  • Dill – best if you buy this fresh in your produce section.
  • Garlic cloves 4-5, or as you prefer. I will use garlic powder if I have to but I like fresh better.
  • Bullion cubes – chicken or veggie. I usually use veggie so my vegans will eat it. I put in 2 for every cucumber.
  • Salt
  • Pepper

Blend Everything but the salt and pepper in a blender. I usually have to do this in 3-4 batches depending on how much I make. Add the blended ingredients to your crockpot or large stove pot and heat to not yet boiling. Reduce the heat to simmer and salt and pepper to taste. Best if you leave this covered while it simmers – an hour works great.

My family likes this served with fried tortillas and cheese – some people call these quesadillas.
